Fall is Beautiful Along the Lake!


Another awesome week at the lake.
 
The leaves were spectacular and
so were the views.
 
I also purchased a map
showing the names of
nearby mountains.
(This is my Father's influence
coming out in me after all these years!)
 
 
 
I discovered the biggy is rightly
 named Oxbow Mountain.
 
 
This visit was different than
the others.
 
We're getting to know more
people on the lake and the
surrounding area.
 
Everyone is so friendly
and welcoming!
 
Plus, we made our last canoe trip
and pulled the dock in.
Winterized the house too,
although we're still open
for rentals.
Fall in the Lake Pleasant area
did not disappoint us...
 
Looking forward to seeing
what snow adventures
await this year!

Falling For the Adirondack Mountains



It is hard not to love fall when you are surrounded
by such beautiful views!
 


The leaves have been gorgeous
and smell of fall is in the air.
 
 
How about a recipe for the occasion!
 
Pumpkin Pancakes:
 
1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt 

    1. In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
    2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
